What's in my pantry?

This is a muffin recipe I made last Sunday, when I really wanted some muffins for the upcoming work week. I am a wreck in the mornings, and tend to run out of time for breakfast at home. I'm not one of those "I don't eat breakfast" types, though, so I usually eat something as I'm walking to the train. I didn't have much around the house, but I had the idea in my head for some type of applesauce oatmeal muffins. I found this recipe when I was looking around online. They turned out beautifully, and were fabulous as I was running out the door to work!
